Definitely slow jets...had a similar problem on my 82 magna.  Fuel filter on it started falling apart and kept clogging slow jets intermittently.  Yours doesn't have the filter, but dirt in the float bowls can get picked up and dropped by the jets causing an intermittent problem.  That's my experience anyway...

Sounds a lot like a clogged jet if you just had the carbs worked on I would take it back and with my hands around their necks I would request that they make it right. The only other thing I can think of is clogged fuel tank screen take the pet cock off and there is a screen that it goes into and check to see if it is clogged.

It sounds like low speed jets, if you want to rule out the pet cock, try running it on reserve only and see if it stays running.  Had that issue with the Rebel.  It would run great and the just die. Finally tried to run it on reserve and it ran perfectly the rest of the 30 mile trip.  Gonna clean the petcock when I get a chance.
